Transforming rice

Introduction

This is an evolving recipe. I am trying to recreate the recipe from Food wars and wish to document it here. I decided to try and not add gelatine since the chicken wings should be all you need.

On my first attempt I did not reduce the liquid by half which lead to a reasonably weak and soft aspic.

Aspic


Ingredients
- Chicken wings (full)
- light soy
- sake (I used Chinese xiao xing wine for my first try since I didn't have sake )
bonito soup stock 2 packets

Method
- Lightly fry the chicken wings until golden on the outside
- boil water in a large pot to cover wings, add the bonito soup stock, sake and light soy
- add wings to the large pot, simmer covered for an hour (you need to reduce the liquid by half or you will get a weak aspic)
- let the pot cool for a bit, remove the wings and set aside
- poor the liquid into a shallow dish, refrigerate until set
